Very Berry Bread Pudding

This berry-tastic bread pudding is a yummy way to fit in that five a day! Super easy, it's the perfect recipe for baking with the kids!


Step 1
  • Preheat your oven to gas 6, 200°C, fan 180°C. Grease your baking dish with butter and sprinkle with caster sugar until evenly covered.
Step 2
  • In a large bowl, whisk together the sugar, Big Milk, double cream, eggs and vanilla extract until the sugar has dissolved.
Step 3
  • Add the brioche cubes to your mix and leave to soak for 10 mins. Meanwhile, add all your fruit and sugar to a pan over medium heat. Once it resembles a thick, sticky compote, set to one side.
Step 4
  • Remove the brioche cubes from the custard and layer your baking dish with half of them. Pour over half of your custard mix, then spoon over half of the compote. Repeat these steps to create another layer on top!
Step 5
  • Pop your baking dish into the oven for 50 mins until golden. Allow it to cool before topping with a few dollops of greek yogurt and chocolate shavings. A delicious way to sneak in the little ones' five fruits a day!
