Give this light, creamy berry trifle a try for an easy summer dessert - perfect for rounding off a picnic or al fresco dinner party.


Step 1
  • Divide the whipped cream between two mixing bowls; add three-quarters of the black cherry jam to one bowl and add the vanilla extract and icing sugar to the other.
Step 2
  • Beat both mixtures well until smooth and creamy.
Step 3
  • Place biscuits on a clean tea towel before wrapping up then bash with a rolling pin to crush them evenly.
Step 4
  • Sprinkle half of the crushed biscuits into the base of 4 serving glasses.
Step 5
  • Spoon over generous tablespoons of the cream mixture before topping with the black cherry mixture.
Step 6
  • Spoon the remaining crushed biscuits on top and top with the remaining cream.
Step 7
  • Top with the remaining jam before covering and chilling until serving.
