Strawberry Ice Lollies Ice Cream

Lovely airy strawberry ice cream. If you dont want to make ice lollies, you can easily freeze as one large mixture.

Instructions

Step 1
  • Blend the strawberry jam at the fastest speed for approximately 10 seconds.
Step 2
  • Beat the egg whites, and then the cream separately, until stiff.
Step 3
  • First fold in the egg yolks, then the jam and finally the whipped egg whites into the whipped cream.
Step 4
  • Spread the mixture into the ice cream moulds and put on the lids. Freeze the ice lollies for approximately 24 hours.
Step 5
  • Dip the ice-cream moulds in warm water briefly, to help pull out the strawberry-ice lollies from the moulds.
Step 6
  • Variation - Put the ice cream mixture in a metal mould (approximately 1½ litres) and place it in the freezer for approximately 24 hours. Place the ice cream in the refrigerator approximately 1 hour before serving. Arrange the strawberry ice cream into balls together with vanilla ice cream, fruit and a crispy cake.

Top Tip

Instead of ice cream moulds, you can freeze the ice mixture in small, cleaned yogurt cups. In both cases the cups are covered with aluminum foil, and a wooden stick is inserted through the foil into the ice cream mixture.
