Sponge Cake

This classic sponge cake is great with a cup of coffee. Or serve with fresh berries and whipped cream, to create a fabulous dessert.


Step 1
  • Heat the oven to 175 °C. Grease a tin, about 1½ litres in size.
Step 2
  • Melt the butter in a saucepan, pour in the milk and let it cool.
Step 3
  • Beat the eggs and sugar until light and creamy - preferably using an electric whisk.
Step 4
  • Mix the vanilla sugar and the flour together and then mix with the baking powder and finally add in the milk mixture. Mix quickly into a smooth batter and put into the tin.
Step 5
  • Bake in the lower part of the oven for about 35 minutes.
