Instructions

  • Mix flour, icing sugar, and spices in a bowl.
  • Cut butter into small pieces and crumble it into the flour mixture until it resembles grated cheese. Knead the dough lightly.
  • Add nuts and strips of pickled or candied bitter orange. Knead the dough well and divide it into 2 portions.
  • Roll each portion of dough into a 15-20 cm log.
  • Mix sesame seeds on a flat plate and roll each log in the sesame seeds so they get completely covered.
  • Place each log on a piece of cling film and flatten the sides to make a square form.
  • Wrap the film tightly around the logs and place them in the freezer for ½ hour or until frozen.
Baking
  • Cut approx. ½ cm thick slices of the frozen dough and place them on sheets of baking paper.
  • Bake the biscuits one tray at a time in the top of the oven for about 7 minutes at 200°C (traditional oven) until light brown. Check the cookies regularly to avoid burning them.
  • Cool the biscuits on a wire rack.
