Saffron Cake

Name: Saffron Cake
Yield: 4 servings
Ingredients: 30 g Chopped almonds; 3 eggs; 40 g caster sugar; 1 pinch salt; g saffron; 30 g wheat flour; 500 g cottage cheese; 200 ml semi-skimmed milk; 200 g berries E.g. Blackberries; 250 ml bechamel sauce

Saffron cake - the Småland cheese cake has taken inspiration from Gotland's saffron pancake.

Instructions

Step 1

Heat the oven to 175 °.

Step 2

Whisk the eggs and sugar together. Stir in the salt, saffron, flour, cottage cheese, chopped almonds and milk.

Step 3

Pour the mixture into a greased ovenproof dish. Bake in the middle of the oven for about 50 minutes.
