Saffron Buns

Saffron buns are great with the addition of the zest and the juice of an orange - they are juicy and tasty!


Step 1
  • Put the yeast in a mixing bowl.
Step 2
  • Melt the butter in a saucepan and add the milk and heat to a maximum of 37 °. Pour it over the yeast.
Step 3
  • Add the quark, saffron, sugar, salt and most of the flour. Work into a dough, cover it and leave it to prove for about 40 minutes.
Step 4
  • Knead the dough on a floured surface. Divide it into 2 pieces. Roll out each piece for a 1/2 cm thin.
Step 5
  • Stir in the butter with the orange zest, juice, sugar and cinnamon. Spread half of the butter on each piece and roll together.
Step 6
  • Cut each roll into 25 pieces. Put them on baking trays lined with baking paper and leave for about 20 minutes.
Step 7
  • Heat the oven to 225 °.
Step 8
  • Brush with beaten egg and sprinkle with granulated sugar.
Step 9
  • Bake in the middle of the oven for 5-8 minutes Leave to cool on a wire rack.
