Ingredients: 80 g icing sugar; 45 g wheat flour; 1 egg white; 3 tbsp whipped cream; 1 leaf gelatine; 100 g white chocolate; ¼ 1/4 vanilla pod; 50 ml whipped cream; 50 ml semi-skimmed milk; 1 tbsp caster sugar; 1 egg yolk; ½ 1/2 mango; 1 tbsp caster sugar; 2 Pressed limes; 10 g Shredded mint Leaves

Crispy flakes with white chocolate cream, topped with sweet-sour mango. A new favourite to serve with coffee.

The Flake

Icing sugar	80 g
Wheat flour	45 g
Egg white	1
Whipped cream	3 tbsp

White Chocolate Team

Leaf gelatine	1
White chocolate	100 g
1/4 vanilla pod	¼
Whipped cream	50 ml
Semi-skimmed milk	50 ml
Caster sugar	1 tbsp
Egg yolk	1

Topping

1/2 mango	½
Caster sugar	1 tbsp
Pressed limes	2
Shredded mint Leaves	10 g

Instructions

Step 1

Heat the oven to 200 °.

Step 2

Mix the icing sugar and flour. Add egg white and cream and stir until a smooth mixture is formed.

Step 3

Spread the batter thinly on a baking tray lined with baking paper. Bake in the middle of the oven for 5-7 minutes Let it cool and break into smaller pieces.

Step 4

Soak the gelatine in cold water, for about 5 minutes.

Step 5

Chop the chocolate. Heat milk, cream, sugar and seeds from the vanilla pod in a saucepan.

Step 6

Pour the hot cream milk mixture over the egg yolk in a bowl while stirring. Pour the mixture back into the saucepan and heat slowly to 83 ° whilst stirring.
