No Bake Marshmallow cheesecake

Delve into a delicious pot of heaven with our delightfully-light No Bake Marshmallow Cheesecake recipe.


Step 1
  • Place the biscuits in a plastic bag, seal and gently crush the biscuits with a rolling pin until you have fine crumbs. Tip out into a bowl and mix with the Arla LactoFREE Butter or syrup.
Step 2
  • Spoon the biscuit crumbs into the base of 4 glasses or serving bowls pressing down with the back of a teaspoon.
Step 3
  • Place 100g of the Arla LactoFREE Soft Cheese and the marshmallows in a microwave proof bowl and microwave together for 30 seconds. Or place in a saucepan and heat gently until just warmed through. Stir until they are well mixed and one texture.
Step 4
  • Divide the mixed marshmallow mixture between the glasses over the top of the biscuit layer.
Step 5
  • Place the remaining Arla LactoFREE Soft Cheese in a bowl and mix with the vanilla extract and the icing sugar until fully incorporated. Spoon or pipe over the top of the marshmallow mixture. Place in the fridge to chill and set for 30 minutes. When ready to serve top with fresh raspberries.
