Minestrone

Delicious hot minestrone soup to enjoy with a soft crisp bread.

Ingredients

Main Recipe

100 g Bacon In Slices
1 tbsp Olive oil
1 Small Finely Choppd garlic clove
2 Coarsely Chopped yellow onions
Celeriac In Smaller Pieces
2 Leeks In Rings
3 Carrots In Slanted Slices
1 Can Of chopped tomato
1¾ litre Vegetable stock
5 Small Sprigs Of Fresh thyme
1 tsp Coarse salt
Freshly pepper
100 g Dried Whole Grain pasta

Additions

50 g Cream cheese
1 tbsp Milk
tsp Coarse salt
Freshly pepper
4 Thick Slices Of Coarse Stale Bread

Instructions

Step 1

  • Cut the bacon slices into strips and fry them in a pan for approximately 3 minutes.

Step 2

  • Add oil, garlic, onion, celery, leeks and carrots and fry for about another 2 minutes. Then add the tomatoes, stock, thyme, salt and pepper to the pan and bring the soup to the boil.

Step 3

  • Add the pasta and let the soup simmer until the pasta is tender for approximately 10 minutes. Taste.

Step 4

  • Mix the cheese, milk, salt and pepper together and spread onto lightly toasted bread. Put under the grill and grill until the cheese is golden. Grill for 5 minutes.
