Mango, Rasin And Coconut Chicken Curry

Chicken in curry is a lovely, mild and child-friendly dish with apples. Serve with fresh mango, raisins and coconut.

Ingredients

Chicken Curry

25 g Butter
2 tsp East Indian curry paste
400 g Chicken fillet
300 g Finely Chopped yellow onions
1 tsp Sugar
1½ tsp Coarse salt
1 Freshly pepper
50 ml Water
3 Unpeeled apples In Cubes
500 ml Milk Sauce

Additions

320 g Loose rice Or 500g Fresh Pasta
50 g Mangos Chutney
50 g Raisins
50 g Coconuts Pieces

Instructions

Step 1

  • Melt the butter in a sauté pan on high heat, without burning. Add the curry paste and let it simmer.

Step 2

  • Fry the chicken pieces for approximately 1 minute on each side and take them out. Sweat the onions for approximately 1 minute. Add the sugar, salt, pepper and water.

Step 3

  • Put the chicken back in the pan. Cover it and cook on low heat for about 12 minutes.

Step 4

  • Add the apple and milk sauce. Boil on a low heat and gently stir for about 2 minutes.

Step 5

  • Taste and serve chicken curry with rice alongside mango, raisin and coconut salad.
