Luxurious Vanilla Ice Cream

Delicious ice cream made of whipped cream and fresh vanilla. Enjoy it on its own or with freshly picked berries or homemade chocolate sauce.

Ingredients

Vanilla pod
1
Syrup
2 tbsp
Whipped cream
150 ml
Semi-skimmed milk
350 ml
Egg yolks
6
Caster sugar
80 g

Instructions

Step 1

  • Halve the vanilla pod and scrape out the seeds. Put the seeds and pod in a saucepan. Add glucose syrup, cream and milk.

Step 2

  • Once at boiling point remove from the heat, and allow to cool slightly. Take out the vanilla pod.

Step 3

  • Whisk egg yolks and sugar until fluffy. Stir in the cream milk and simmer whilst constantly whisking until it thickens a little. Do not let it boil.

Step 4

  • Pour into a bowl and let it cool completely. Run the mixture in ice cream machine for creamy texture.
