Luxurious Vanilla Ice Cream

Name: Luxurious Vanilla Ice Cream
Yield: 4 servings
Ingredients: 1 vanilla pod; 2 tbsp syrup; 150 ml whipped cream; 350 ml semi-skimmed milk; 6 egg yolks; 80 g caster sugar

Delicious ice cream made of whipped cream and fresh vanilla. Enjoy it on its own or with freshly picked berries or homemade chocolate sauce.

Instructions

Step 1

Halve the vanilla pod and scrape out the seeds. Put the seeds and pod in a saucepan. Add glucose syrup, cream and milk.

Step 2

Once at boiling point remove from the heat, and allow to cool slightly. Take out the vanilla pod.

Step 3

Whisk egg yolks and sugar until fluffy. Stir in the cream milk and simmer whilst constantly whisking until it thickens a little. Do not let it boil.

Step 4

Pour into a bowl and let it cool completely. Run the mixture in ice cream machine for creamy texture.
