Luxurious Cream Cake

Make a perfect luxurious cream cake dessert. Decorate with fresh berries or other fruits.


Step 1
  • Heat the oven to 175 °. Grease and bake a round cake tin, about 24 cm in diameter.

  • Beat eggs and sugar together until light and creamy. Mix the wheat flour, potato flour and the baking powder together and stir it into the egg mixture.

  • Pour the mixture into the cake tin. Bake in the lower part of the oven for about 30 minutes. Let the cake rest a few minutes before being left on a cooling rack.

  • Mix milk, 1.5 cup cream, egg yolks, sugar and potato flour in a saucepan. Heat on a low heat while stirring, until the cream thickens and the first bubble appears. Lift the pan away from the heat.
Step 5
  • Leave the gelatine leaves in cold water for 5 minutes. Remove them from the water and place them in the warm cream. Stir until the gelatine melts.
Step 6
  • Put the saucepan in cold water to cool the cream. Occasionally stir. Whisk 2 cups of cream with vanilla sugar to form stiff peaks and mix into the cream when it is cool.
Step 7
  • Divide the cake into three disks. Put a layer of cream on two of the disks and place the mashed berries on the cream. Layer the cake together.
Step 8
  • Beat the cream. Spread some cream around the edge and on top of the cake. Put the rest in a piping bag and pipe the cream on the cake. Garnish with fresh berries.
