Lemon Squares

Ingredients: 100 g butter; 3 eggs; 280 g caster sugar; 100 ml sour cream; 210 g wheat flour; 2 tsp baking soda; Zest Of 2 lemons; 2 tbsp Dark rum; 150 g fresh cheese; 80 g icing sugar; 100 ml buttermilk; 100 g Lemon Curd

A juicy and really delicious lemon cake with a lovely sweet-sour frosting. Cut it up small for the buffet or enjoy a larger piece for a dessert!

Ingredients

Butter	100 g
Eggs	3
Caster sugar	280 g
Sour cream	100 ml
Wheat flour	210 g
Baking soda	2 tsp
Lemons	Zest Of 2
Dark rum	2 tbsp

Frosting

Fresh cheese	150 g
Icing sugar	80 g
Buttermilk	100 ml
Lemon Curd	100 g

Instructions

Step 1

Heat the oven to 175 °. Place a baking sheet paper in the bottom of a long cake tin, about 30 x 30 cm. Melt the butter.

Step 2

Stir the sour cream into the butter. Whisk eggs and sugar until fluffy. Mix the flour, baking soda and lemon zest together.

Step 3

Fold in the butter and flour mixture rapidly into the mixture. Pour the mixture into the tin and bake for about 40 minutes. Let it cool.

Step 4

Whisk together cream cheese and icing sugar. Beat the sour cream and stir into the cream cheese mixture.

Step 5

Stir the mixture with the fresh cheese which may be a little sloppy. Spread the frosting on the cake with dollops of lemon curd. Sprinkle on the icing sugar and cut into pieces.
