Lemon Squares

A juicy and really delicious lemon cake with a lovely sweet-sour frosting. Cut it up small for the buffet or enjoy a larger piece for a dessert!


Step 1
  • Heat the oven to 175 °. Place a baking sheet paper in the bottom of a long cake tin, about 30 x 30 cm. Melt the butter.
Step 2
  • Stir the sour cream into the butter. Whisk eggs and sugar until fluffy. Mix the flour, baking soda and lemon zest together.
Step 3
  • Fold in the butter and flour mixture rapidly into the mixture. Pour the mixture into the tin and bake for about 40 minutes. Let it cool.
Step 4
  • Whisk together cream cheese and icing sugar. Beat the sour cream and stir into the cream cheese mixture.
Step 5
  • Stir the mixture with the fresh cheese which may be a little sloppy. Spread the frosting on the cake with dollops of lemon curd. Sprinkle on the icing sugar and cut into pieces.
