Lemon Sponge Cake

Freshly baked sponge cake is always popular and can be made multiple ways. This cake has the classic taste of lemon, sour cream and a dash of rum.

Ingredients

Butter
75 g
Eggs
2
Caster sugar
280 g
Buttermilk
100 ml
Wheat flour
180 g
Baking soda
1½ tsp
Lemon juice
1 tbsp
Lemon
Zest Of 1
Dark rum
2 tbsp

Instructions

Step 1

  • Heat the oven to 175 °.

Step 2

  • Melt the butter. Grease a round baking dish that holds about 1½ litres.

Step 3

  • Whisk eggs and sugar fluffy. Stir the sour cream into the melted butter.

Step 4

  • Mix the flour, baking soda and lemon zest together. Fold the flour mixture into the batter.

Step 5

  • Finally add the butter mixture, lemon juice and rum in the batter.

Step 6

  • Pour the batter into the tin and bake on the bottom shelf of the oven for about 40 minutes.
