Ingredients: 75 g butter; 2 eggs; 280 g caster sugar; 100 ml buttermilk; 180 g wheat flour; 1½ tsp baking soda; 1 tbsp lemon juice; Zest Of 1 lemon; 2 tbsp Dark rum

Freshly baked sponge cake is always popular and can be made multiple ways. This cake has the classic taste of lemon, sour cream and a dash of rum.

Instructions

Step 1

Heat the oven to 175 °.

Step 2

Melt the butter. Grease a round baking dish that holds about 1½ litres.

Step 3

Whisk eggs and sugar fluffy. Stir the sour cream into the melted butter.

Step 4

Mix the flour, baking soda and lemon zest together. Fold the flour mixture into the batter.

Step 5

Finally add the butter mixture, lemon juice and rum in the batter.

Step 6

Pour the batter into the tin and bake on the bottom shelf of the oven for about 40 minutes.
