Ice Cream with Popcorn and Roasted Marshmallows

Caramel popcorn is wonderfully crispy, sweet and salty when served with ice cream. Carefully watch the oven when grilling the marshmallow as sugar burns quickly.

Instructions

Step 1
  • Heat the oven to 200 °.
Step 2
  • Place marshmallows on a tray and cook in the middle of the oven for about 10 minutes until they have a browned surface.
Step 3
  • Mix the cream and milk in a saucepan. Whisk egg yolks and sugar together.
Step 4
  • Heat the cream milk and add the egg and sugar mixture, whisking constantly, heat to about 83 °. Remove from heat.
Step 5
  • Add toasted marshmallows to the batter and mix smoothly with an electric whisk, and allow to cool.
Step 6
  • Mix popcorn with honey and place on a baking tray lined with baking paper. Toast in the middle of the oven for about 10 minutes.
Step 7
  • Run the ice cream through an ice cream machine and mix in ⅔ of the popcorn at the end.
Step 8
  • Garnish the ice cream with the remaining popcorn and leftover toasted marshmallows.
