  • Melt sugar and butter in a pan and let it caramelise lightly.
  • Add quinoa, oats, and spelt flakes, and gently stir them together over medium-high heat until the granola obtains a golden-brown colour.
  • Spread the hot granola onto a baking sheet lined with parchment paper to cool.
  • Scoop skyr into two bowls and top it with granola, pomegranate seeds, hazelnuts, and thyme. Serve immediately.

To get the pomegranate seeds ready, simply cut a pomegranate in half, divide it into its natural segments, and gently take out the seeds. You can do this by tapping the back of the pomegranate with a spoon over a bowl, or by putting the halves or segments in water and gently loosening the seeds.
