Gluten-free Waffles with Cottage Cheese

Protein-rich gluten-free waffles are loved by adults and children - for a feast, an appetiser or dessert. The waffles go really well with both sweet and savory toppings.

Ingredients

2 tsp Baking soda
120 g Rice flour
100 g Corn starch
200 ml Semi-skimmed milk
1 Egg
100 g Melted butter
150 g Cottage cheese

Suggetions for Toppings

Liquid honey
Berry mix
Pumpkins
Icing sugar
Lettuce
Red Roe
Fresh chives
Radishes
Capers
Fresh oregano
Salt & black pepper

Instructions

Step 1

  • Heat the waffle iron.

Step 2

  • Mix all dry ingredients in a bowl. Pour in the milk and whisk to a thick batter. Beat in the eggs, then chilled butter and cottage cheese.

Step 3

  • Brush the iron with butter between each bake. Bake until the waffles are golden brown. Serve with your favourite toppings.
