French Waffle Cookies

French Waffle Cookies

These wonderfully crispy waffles with soft butter cream are called Parisian waffles. Try cutting the waffle dough into various shapes for a nice variation of this waffle dish!

Ingredients

Dough

Wheat flour	150 g
Butter	100 g
Water	1½ tbsp
Caster sugar	80 g

Filling

Butter	75 g
Icing sugar	80 g
Egg yolk	1
Vanilla sugar	1½ tsp

Instructions

Step 1

Mix flour and butter into a crumbly mixture. Add water and work quickly together to form a dough.

Step 2

Let the dough rest for at least one hour in the refrigerator.

Step 3

Heat the oven to 225 °.

Step 4

Roll out the dough thinly with a rolling pin on a sugared surface.

Step 5

Cut out 22 shapes with an oval or round measure about 6 cm in diameter.

Step 6

Put them on tray with baking paper and bake in the middle of the oven for 6-7 minutes. Let the cookies cool.

Step 7

Stir together butter and icing sugar, stir in the egg yolk and vanilla sugar.

Step 8

Spread the filling thinly on half of the cookies and sandwich two together.
