Creme Brulee flavoured with Lemon

A classic crème brûlée with a fresh, mild taste of lemon. To get crème brûlée extra crispy, you can cook twice.


Step 1
  • Heat the oven to 50 °. Cut the vanilla pod lengthwise and scrape out the seeds using a knife. Peel thin strips of lemon peel using a potato peeler.
Step 2
  • Mix vanilla pods, vanilla seeds, lemon zest, cream and milk in a saucepan. Boil while stirring. Remove from the heat and let it cool.
Step 3
  • Mix the sugar and egg yolks together. Strain the cream milk mixture and stir thoroughly. Pour the mixture into oven-safe dessert tins.
Step 4
  • Place the moulds in a water bath and bake in the bottom of the oven for about 60 minutes until the cream begins to solidify. They solidify further when they are cold. Store in a refrigerator until just before serving.
Step 5
  • Sprinkle raw sugar evenly into the moulds and burn the top with a gas burner or under the grill in the oven until the sugar melts and has a fine brown colour."
