Creamy Egg Salad

Name: Creamy Egg Salad
Yield: 4 servings
Ingredients: 4 Extra Large eggs; 50 ml creme fraiche; tbsp dijon mustard; 2 pinches salt; 2½ tbsp Finely Chopped Fresh chives; 100 g Peeled prawns

Egg salad is a nice alternative when you get tired of egg halves on herring. Egg salad is easy to make and great to share.

Instructions

Step 1

Cook the eggs and let them cool. Cut off the top of the eggs with a sharp knife.

Step 2

Carefully remove the insides but make sure the egg shell doesn't break.

Step 3

Chop the eggs and mix with crème fraîche, mustard, salt and most of the chives.

Step 4

Put the egg mixture back in the shells. Top with prawns, roe and chives.
