Coconut Parfait with Mint
Coconut Parfait with Mint
The freshness of the coconut works well with the sweetness of the parfait.
Instructions
Step 1
Roast the coconut in a dry hot pan until it turns light brown - keep aside.
Step 2
Mix the egg yolks with the icing sugar. Add the mint and the coconut milk.
Step 3
Whip the cream. Stir in the cream and coconut into the egg mixture.
Step 4
Pour into an oblong dish and cover with cling film. Freeze for at least 4 hours.
Step 5
Take out the coconut parfait and leave in the fridge for approximately 30 minutes before serving.
Step 6
Place the parfait on a cutting board. Cut it into slices and then into diagonal pieces and serve.
