Chocolate Terrine

A luxurious chocolate terrine that is well worth the effort - it is not difficult but does take a while to do. Serve with homemade vanilla cream and roasted seeds and nuts.

Instructions

Step 1
  • Heat 2 cups of cream and melt the dark chocolate in it. Pour the mixture into a plastic elongated mould about 1 ½ litres and let it solidify.
Step 2
  • Heat 1 ½ cup of cream and melt the milk chocolate in it. Pour into the mould and let it solidify.
Step 3
  • Heat 1 cup of cream and melt the white chocolate in it. Pour into the mould. Leave the terrain overnight to solidify properly.
Step 4
  • Roast nuts, pumpkin and sunflower seeds in a dry hot frying pan about 5 minutes. Add icing sugar towards the end. Let cool and chop roughly.
Step 5
  • Cut and scrape the vanilla pod. Mix all ingredients into the vanilla cream. Whisk using an electric whisk until creamy texture.
Step 6
  • Cut the terrain into slices with a hot knife. Serve with vanilla cream, roasted nuts and seeds and raspberries. Garnish with lemon balm."
