Cauliflower Gratin

Cauliflower Gratin

Gratin is like a great grandmother - a great way to get the kids to love cauliflower.

Ingredients

Cauliflower in Small Florets
300 g
Water
½ litre
Coarse salt
½ tsp
Cooked smoked ham
150 g
Wheat flour
90 g
Milk
300 ml
Butter
10 g
Egg yolks
4
Coarse salt
1 pinch
Freshly pepper
1 pinch
Egg whites
4
Breadcrumbs
1½ tbsp

Garnish

Pinch of chives

Additional

Slices of Toasted wholemeal rye bread

Tomatoes
300 g
Iceberg lettuce
100 g

Instructions

Step 1

  • Put the cauliflower florets into salted, boiling water and cook for approximately 4 minutes. Drain the cauliflower in a sieve.

Step 2

  • Cut the ham into small cubes.

Step 3

  • Put the flour and 150ml of milk in a thick-bottomed pan. Whisk until smooth. Add the rest of the milk and butter and bring to a boil whilst whisking. Cook the mixture well. Remove the pan from the heat and let the mixture cool slightly.

Step 4

  • Stir in the egg yolks one at a time. Stir well in between. Add salt, pepper, ham and cauliflower florets. Beat the egg whites until very stiff, and fold half into the mixture with a dough scraper.

Step 5

  • Finally fold the rest of the whites in gently. Pour the mixture into a greased gratin dish (approximately 2 litres). Bake in the middle of the oven. Serve immediately.

Baking Time

  • 1 hour at 175 °

Make a broccoli gratin - use lightly steamed broccoli instead of cauliflower - however, broccoli neeeds only 1½-2 minsutes cooking at the start.
