Cardamom buns

Few smells are as wonderful as freshly-ground cardamom. If you don't have a mortar and pestle, you can crush the cardamom pods with a rolling pin or put the pods between two cutting boards and crush them. This ensures you get the most flavour out!

Instructions

Step 1
  • Crumble the yeast into a bowl. Heat the milk to about 37 °. Pour the milk over the yeast, and stir until the yeast dissolves.
Step 2
  • Add the salt, sugar, cardamom, butter, eggs and almost all the flour. Work the dough until it becomes glossy and smooth. Allow to rest under a cloth for about 30 minutes.
Step 3
  • Heat the oven to 225 °.
Step 4
  • Mix the filling ingredients together. Work the dough on a lightly floured surface. Divide the dough into two pieces and roll out into rectangles, about 30 x 45 cm.
Step 5
  • Spread the filling on the rectangles of dough. Fold the rectangles in half. Cut the rectangles into strips, approximately 2 cm wide.
Step 6
  • Roll the strips loosely together, in a spiral. Place them on baking trays. Allow to rest under the towel for about 30 minutes.
Step 7
  • Mix together sugar and cardamom. Brush the buns with eggs and sprinkle with the sugar mixture.
Step 8
  • Bake in the middle of the oven for 8 - 10 minutes. Leave to cool on a rack under the cloth.
