Bruschetta chicken with butterbean mash

Arla Cravendale's bruschetta chicken recipe, served with smooth and creamy butterbean mash. This tasty dish combines juicy chicken with a fresh, vibrant bruschetta topping. Perfect for a midweek meal or a relaxed dinner party. Easy to prepare and full of classic flavours with a twist.

Ingredients

Topping

4 Large vine tomatoes roughly chopped
1 handful of fresh basil roughly torn
1/2 a red onions finely chopped
3 tbsp Virgin olive oil
1 Mozzarella ball drained and sliced
2 tbsp Panko breadcrumbs

For the chicken

3 tbsp Olive oil
1 tsp Garlic powder
1 tsp Onion powder
1 tbsp Dried oregano
2 Chicken breasts halved horizontally to make 4 thinner fillets

For the mash

1 tbsp Butter
3 Garlic cloves minced
2 tins Butter beans
150 ml Vegetable stock
1 Juice of 1 lemon

Instructions

  • Pre-heat oven to gas mark 6, 200°C, fan 180°C. Start by creating your topping- simply add all topping ingredients plus seasoning to a bowl bar mozzarella and breadcrumbs, give a good mix and pop to one side.
  • Mix your oil, garlic, onion powder, oregano and a big pinch of salt and pepper. Lay your chicken on a lined baking tray and drizzle all over with your garlic & oregano oil. Pop in the oven for 15 mins.
  • Meanwhile, onto your butterbean mash. Heat your butter in a large, non-stick pan over a medium heat, add your garlic and cook for a minute until fragrant. Add your beans and stock and simmer for 5 mins.
  • Add your lemon juice and Arla Cravendale to your mash and use a hand blitzer to blitz until smooth, or if you would like texture just use the back of a fork to mash together. Season with salt and pepper, stir and reduce to a low heat.
  • When your chicken has had 15 mins in the oven, remove and divide your mozzarella across the top of each and sprinkle with breadcrumbs before popping back in the oven for a couple of minutes until melted. Once melted, remove and top each with your bruschetta topping.
  • Serve alongside a good helping of creamy butterbean mash
