Brioches

Brioches are French, airy small breads, that are baked with wheat flour and eggs. Room temperature butter is worked into the dough, which gives the bread a buttery taste.

Instructions

Step 1
  • Heat the milk to a maximum of 37 °C. Crumble the yeast into a bowl, add the milk, salt and 200 g of flour. Work together to form a loose dough. Allow to rise under a cloth for 30 minutes.
Step 2
  • Stir in the butter and sugar gently; knead into the dough and add the eggs. Add the rest of the flour and work together to form a smooth dough. Put the dough on a lightly floured surface and form 20 large and 20 small balls.
Step 3
  • Place the large balls in small bread moulds with a small ball on top. Allow to ferment under the towel for about 30 minutes. Heat the oven to 225 °C.
Step 4
  • Brush the dough with the beaten egg and bake in the middle of the oven for about 10 minutes. Leave to cool on a wire rack.
