Almond Cakes

Juicy, small almond cakes with a lime and mint flavour.


Step 1
  • Get the almonds in a small grinder or a food processor and chop them finely at the fastest speed for approximately 1 minute.
Step 2
  • Add the icing sugar and blend for another approximately 20 seconds. Add egg white gradually, lime zest and 5 mint leaves. Blend the mixture until it begins to stick together.
Step 3
  • Form the dough into small "eggs" with two teaspoons and place them on a baking sheet. Squeeze a mint leaf onto each of the bread loaves and place them in the middle of the oven.
Baking Time
  • 12-14 minutes at 175 °
Top Tip

Instead of lime and mint you can use ½ cup roasted and chopped hazelnuts. Decorate the cakes with whole hazelnuts and place them in the middle of the oven. Dip in melted dark chocolate.
