- 250 ml Lactofree Cream Whipped
- Vanilla Extract
- Icing Sugar
- 200 g Lactose Free Digestives
- 175 g Black Cherry Jam
1. Divide the whipped cream between two mixing bowls; add three-quarters of the black cherry jam to one bowl and add the vanilla extract and icing sugar to the other. 2. Beat both mixtures well until smooth and creamy. 3. Place biscuits on a clean tea towel before wrapping up then bash with a rolling pin to crush them evenly. 4. Sprinkle half of the crushed biscuits into the base of 4 serving glasses. 5. Spoon over generous tablespoons of the cream mixture before topping with the black cherry mixture. 6. Spoon the remaining crushed biscuits on top and top with the remaining cream. 7. Top with the remaining jam before covering and chilling until serving.
