Winter Pasta

This tasty recipe for winter pasta includes cabbage, celery and peas combined with fresh tagliatelle to give a delicious winter-inspired taste.

Ingredients

Butter
25 g
Fresh brussels sprouts
400 g
Celery Stems In Thin Slices
10
Wheat flour
1 tbsp
Double cream
250 ml
Vegetable stock
100 g
Thawed frozen peas
250 g
Coarse salt
1 tsp
Fresh pasta
500 g
Water
2 litres
Coarse salt
2 tsp
Double cream
100 ml

Instructions

Step 1

  • Melt the butter in a sauté pan at high heat, without burning.

Step 2

  • Add the brussel sprouts and celery for approximately 1 minute. Sprinkle flour over the vegetables and mix until the flour is well distributed.

Step 3

  • Pour cream and vegetable stock into the vegetables while stirring and bring to a boil.

Step 4

  • Cook on low heat with the lid on for approximately 3 minutes. Add peas and salt, heat the dish and taste.

Step 5

  • Put the pasta in a large pot of boiling water with salt added. Cook the pasta at high heat and without a lid for approximately 5 minutes. Occasionally stirring. The pasta should be tender without being soft.

Step 6

  • Drain the pasta. Pour the cooked pasta into a large, warm bowl and distribute the vegetables. Serve immediately.
