Find fresh and ripe veggies

When choosing vegetables for your tacos, they need to be as fresh and ripe as possible. A firm red cabbage with tightly packed leaves and a deep purple colour is ideal. Pick tomatoes that feel heavy for their size, with smooth skin and a slight give when pressed. A ripe avocado should yield slightly to gentle pressure but not feel mushy. Avoid any with bruises or dark spots.

Warm tortillas the best way

Warming tortillas makes them soft and pliable, and there are three easy ways to do it. On the hob, heat a dry cast iron or non-stick pan over medium-high heat, then warm each tortilla for about 30 seconds per side until air pockets form.  The second option includes using a microwave. Stack a few tortillas with a damp paper towel between them and on top, then microwave on high for 20–30 seconds. Lastly, you can wrap a stack of five or fewer tortillas in a packet of aluminium foil and put it in a pre-heated 180 °C oven for 15–20 minutes, until heated through. You can do multiple packets of five tortillas each all at the same time.

Always go for fresh lime juice

Fresh lime juice makes a noticeable difference, offering a livelier, tarter flavour that bottled versions simply cannot match. The easiest and most efficient way to squeeze a lime is to roll it on a hard surface before cutting to release more juice. Then, slice it in half and squeeze by hand or use a citrus juicer.

FAQ: Questions about veggie tacos

Do you have any questions about making veggie tacos? We have covered the most common ones below to help you out.

Can I prepare veggie tacos in advance?

Yes, you can get a head start on the veggie tacos by prepping the ingredients in advance, and if you can, assemble the tacos just before serving. Tomato salsa and cabbage mixture stay fresh in the fridge for up to a day when stored in airtight containers. Avocado is best sliced fresh to keep it from browning, and tortillas should be warmed right before serving for that soft, pliable texture.

How do I assemble my veggie tacos?

To assemble the veggie tacos, start by warming the tortillas until they are soft and ready to fill. Load them up with the cabbage and sweetcorn mixture, then spoon over the tomato salsa. Top with chunks of avocado and a crumble of white cheese, and serve with lime wedges on the side. Serve right away while everything is fresh and full of flavour!

How do I store veggie tacos?

Store leftover veggie tacos by wrapping each one tightly in cling film or placing them in an airtight container in the fridge for up to a day. If the tacos have not been assembled yet, store each component separately to maintain their texture and flavour.

Try our incredible veggie tacos

Our recipe for veggie tacos is out-of-this-world delicious! Layers of fillings harmonise, yet each flavour keeps its own personality while the overall taste stays fresh and lively. To top them off, instead of the classic Mexican queso fresco, we crumble over white cheese for a more intense salty bite. Grab a tortilla, fill it abundantly, and relish every flavourful bite!

A rainbow of the very best vegetables

The taco filling will instantly captivate you with its stunning colours – deep purple cabbage, golden-yellow corn, and creamy green avocado. Beyond their visual charm, they offer a flurry of flavours. Red cabbage provides a crisp, peppery foundation, while sweetcorn pops with juicy sweetness, offsetting the cabbage's bite. Then comes the avocado, rich and buttery, softening the sharper textures with its smooth contrast.

Bright and zesty tomato salsa

A proper salsa is a must for every taco! As always, tomatoes take the lead with their juicy and mildly sweet-acidic flavour. Garlic contributes its slightly spicy sharpness, giving the salsa a punchy edge, while mint offers a cooling, subtly sweet herbal accent. A squeeze of lime vivifies everything by sharpening the sweetness of the tomatoes, making the fresh mint even more vibrant and crisp. Mexico is known for their bright and zesty salsas, and this one is no different.

A Mexican-inspired taco fit for a fiesta

Tacos are a way of life in Mexico, filling the streets with sizzling grills, colourful toppings, and flavours that make you pause just to take it all in. That is precisely the spirit we are channelling with our easy veggie tacos, which are Mexican-inspired and made for a proper feast.

Load up the table with all the best sides because veggie tacos deserve good company. Serve them alongside other tacos like tacos al pastor with marinated pork, tacos de pescado with grilled fish and fresh slaw, or crispy chicken tacos with mango salsa. Of course, no fiesta is complete without dips and sauces. A creamy guacamole is a must, and a spicy green chilli sauce is there if you need a little more spice on the dinner table.

Filling the evening with delicious meals really is that easy. Burritos stuffed with slow-cooked beef make sure no one leaves hungry, baked nachos piled high with cheese are always a hit, steak fajitas offer a tempting smoky touch, while golden corn fritters add an aromatic crunch.

Explore other types of filling

Veggie tacos are all about mixing and matching, so experiment with other ingredients to introduce new dimensions to your tacos. For more crunch, shredded carrots offer a slight sweetness, while thinly sliced radishes keep things crisp with their mild peppery bite. If you want something heartier, roasted red peppers provide a soft, slightly smoky sweetness.

Looking for a little extra freshness? A handful of chopped coriander provides a bright, citrusy note, parsley keeps things earthy and mellow, and spring onions sharpen things up with their slight zestiness.
