Vegetable Stew with Pasta and Skyr Topping

Ingredients

Butter
25 g
Stems of celery (sliced)

Finely Chopped white onion
1
Carrots in Small Pieces
2
Cans of Chopped tomatoes
2
Water
¼ litre
Dried pasta
200 g
Coarse salt
2 tsp
Can of sweetcorn
1
Can of red bean in Chillisauce
1
Chillies
¼ tsp
Quark
250 ml
Tomato purée
1½ tbsp
Fresh fresh basil Leaves (for sprinkling)
Fresh Stale Bread
2 slices

Instructions

Step 1

  • Let the butter melt in a saucepan on a high heat, be careful not to burn it. Add the celery, onions and carrots to the pan for approximately 1 minute then add tomatoes.

Step 2

  • Boil a pan of water, add the pasta once boiling and 1.5 tsp salt. Bring the water back to boiling and then turn down to let it simmer on a low heat with a lid for approximately 15 minutes or until the pasta is tender - occasionally stir.

Step 3

  • Put corn, beans, basil and chilli your vegetable pan. Heat the vegetables and season to taste.

Step 4

  • Stir quark, tomato puree and 0.5 tsp salt together. Taste and adjust to your preference.

Step 5

  • Mix the pasta and vegetables in the pan, serve in bowls then top with a dollop of quark. Garnish with basil and serve with coarse bread.
