Spiced Pumpkin Cake

Ingredients: 500 g pumpkins; 200 g butter; 200 g sugar; 3 eggs; 200 g wheat flour; 1½ tsp ground ginger; 2 tsp baking powder; 150 g icing sugar; 2 tbsp Freshly Squeezed orange juice; Strips Of oranges Peel (Unwaxed)

A lovely spongy pumpkin cake with orange glaze that tastes great!

Instructions

Step 1

Remove the seeds from the pumpkin. Cut the pumpkin into large wedges and peel them (do not cut too close to the peel).

Step 2

Cut the pumpkin meat roughly - there needs to be about 300 g of it.

Step 3

Mix the butter and sugar well. Add one egg at a time to the mixture, stirring well between each egg. Stir the pumpkin meat and orange peel into the egg mixture.

Step 4

Mix the wheat flour, ginger and baking powder and sieve it into the pumpkin mixture.

Step 5

Put the mixture into a greased spring-bottomed cake tin (about 22 cm in diameter) and place on a baking tray in the middle of the oven.

Step 6

Glaze - Mix the icing sugar and orange juice into a thick glaze and decorate the finished cake. Baking time - 1 hour at 175 °.
