Spiced Pumpkin Cake

A lovely spongy pumpkin cake with orange glaze that tastes great!


Step 1
  • Remove the seeds from the pumpkin. Cut the pumpkin into large wedges and peel them (do not cut too close to the peel).
Step 2
  • Cut the pumpkin meat roughly - there needs to be about 300 g of it.
Step 3
  • Mix the butter and sugar well. Add one egg at a time to the mixture, stirring well between each egg. Stir the pumpkin meat and orange peel into the egg mixture.
Step 4
  • Mix the wheat flour, ginger and baking powder and sieve it into the pumpkin mixture.
Step 5
  • Put the mixture into a greased spring-bottomed cake tin (about 22 cm in diameter) and place on a baking tray in the middle of the oven.
Step 6
  • Glaze - Mix the icing sugar and orange juice into a thick glaze and decorate the finished cake. Baking time - 1 hour at 175 °.
