Spiced Cauliflower and Turmeric Soup

Step 1
  • Place a large saucepan onto a medium heat. Heat the olive oil and reduce to a low heat. Add the onion, garlic, paprika and turmeric. Cook for 10 minutes, stirring often, or until the onions are soft.
Step 2
  • Add the cauliflower and cook for a further 5 minutes
Step 3
  • Pour in the vegetable stock and Arla LactoFREE Whipping and Cooking Cream. Bring to the boil, then reduce to a simmer and cook for 25 minutes.
Step 4
  • Once cooked, allow to cool slightly and cover with a clean tea towel before blending.
Step 5
  • To serve, ensure the soup is heated thoroughly and swirl through Arla LactoFREE Whipping and Cooking Cream and garnish with a sprinkle of turmeric, pumpkins seeds and coriander.

You can use curry powder if you don’t have ground turmeric.


Sunflower seeds work well too if you don’t have pumpkin seeds.
