Biscotti, the dry Italian biscuits, has already become a Swedish classic. In this recipe they have been spiced with saffron. Saffron biscotti are excellent as a snack, served with mulled wine or coffee.

Instructions

Step 1
  • Pre-heat the oven to 175°C
Step 2
  • Chop almonds roughly. Mix together the butter, sugar and saffron. Then stir the eggs in one at a time.
Step 3
  • Mix together the wheat flour, baking powder, vanilla sugar and almond. Stir it into the mixture until everything is mixed.
Step 4
  • Place the dough on a floured countertop and roll it into two long sausages that are as long as the baking tray. Place them on a sheet of baking paper on a baking tray. Bake in the lower part of the oven for about 30 minutes.
Step 5
  • Remove the tray from the oven. Lower the heat down to 100°C. Let cool slightly and cut them into long, slanted pieces.
Step 6
  • Put them back on the tray with the cut surface facing up and dry them in the oven for another 30 minutes or until dry.
