Roasted Sweet Potato Salad

A beautiful salad using roasted sweet potatoes, fresh potatoes and sour cream. The roasted potatoes give a great flavour. This salad is ideal with salmon, beef and grilled aubergine.


Step 1
  • Heat the oven to 225 °. Peel the sweet potatoes and cut into pieces. Wash the fresh potatoes and cut into slices.
Step 2
  • Put the potatoes on a baking tray and pour over the butter. Roast in the middle of the oven for about 30 minutes and then let it cool.
Step 3
  • Shred the spring onions and halve the tomatoes. Mix all ingredients together and put into a large dish. Sprinkle with the pepper and salt.
