Potato Cake with Olives and Fresh Herbs

An alternative recipe to the classic potato cake with a slightly spicy-flavour.

Ingredients

Olives
200 g
Potatoes
1500 g
Grated Arla® LactoFREE Cheddar
150 g
Fresh herbs
10 g
Finely Chopped garlic cloves

Casserole

Eggs
3
Whipped cream
150 ml
Semi-skimmed milk
150 ml
Salt
1 tsp
Black pepper
1 pinch

Instructions

Step 1

  • Heat the oven to 200 °. Fill a tray halfway with warm water and place in the lower part of the oven.

Step 2

  • Peel and cut the potatoes into thin slices.

Step 3

  • Whisk the ingredients into the egg mixture and mix in the other ingredients.

Step 4

  • Fill a greased tin with detachable bottom, about 24 cm in diameter, with the potato and egg mixture.

Step 5

  • Place the tin in the water-filled pan and bake for about 1 1/2 hours. Check that the potatoes have softened. Let the potato cake stand and cool for at least 2 hours before serving.
