Parsnip

Cook the parsnips until they are really soft, to ensure the puree is smooth. Using crème fraîche makes for a creamy puree and the acid balances the sweetness of the parsnips.

Ingredients

Creme fraiche
200 ml
Parsnips
800 g
Butter
1 tbsp
Salt
2 pinches
Ground White pepper
1 pinch

Instructions

Step 1

  • Peel and cut the parsnips into pieces. Boil them in salted water.

Step 2

  • Drain the water and mix with a blender to a smooth puree with crème fraîche and butter.

Step 3

  • Season with salt and pepper.
