Instructions

  • Preheat oven to 200°C.
  • Spread butternut squash and mushrooms in a single layer on two large baking sheets. Sprinkle with oregano, paprika, garlic powder, and two tablespoons of olive oil, and then toss everything well. Place the trays in the oven and bake until golden and tender.
  • In the meantime, prepare the sauce. Heat the remaining olive oil in a saucepan and sauté onions in it for 5-6 minutes until soft.
  • Reduce heat to low, stir in garlic and cook for another minute, then add the flour and cook for a minute.
  • Slowly pour in milk, stirring constantly, until it smoothens. Heat until it thickens, and then remove from the heat.
  • Bring a large pot of water to a boil and cook pasta according to the directions on the package. Drain well and return to pot.
  • Add the creamy sauce to the pot along with spinach leaves and toss everything well. Now stir in roasted vegetables, season to taste, and then toss everything gently and serve immediately.

There are several ways to prepare butternut squash for baking. The simplest way is to peel it with a vegetable peeler or a sharp knife. Slice or peel downward, following the curve of the butternut squash. Then cut off the top and bottom, slice it vertically and scoop out the seeds and pulp with a spoon. It is now ready to be cut into large cubes!
