Colourful Small Pancakes

The Swedish response to the Russian blini - a small pancake with a lingonberry filing.

Ingredients

Salt	1½ tsp
Wheat flour	120 g
Semi-skimmed milk	400 ml
Eggs	3
Potatoes	4
Carrots	4
Chopped Fresh fresh parsley	10 g

Sauce

Sour cream	200 ml
Raw lingonberries	50 ml

Instructions

Step 1

Mix the flour, salt and half of the milk together. Whisk to a smooth batter. Whisk in the eggs and the rest of the milk.

Step 2

Peel and grate the potatoes and carrots roughly and stir into the batter. Mix in the parsley.

Step 3

Bake the batter in butter in a flat pan or a steak pan.

Step 4

Mix the sour cream and lingonberries.

Step 5

Serve the pancakes with the sauce, salad and bread.
