Cauli-Cheese Carbonara

Make cauliflower your little one's favourite food without them even noticing! This family-friendly carbonara recipe is perfect for cooking with the kids.


Step 1
  • Heat your cauliflower and onion in a large pan over medium heat, followed by your Big Milk. Cover and allow to simmer for 20 mins.
Step 2
  • Whilst that cooks, fry your pancetta over medium heat for 6-8 mins. Once crisp, remove from the pan and set aside.
Step 3
  • When your cauliflower has about 10 mins left, boil your spaghetti in a large pot of salted water for 10-12 mins.
Step 4
  • Once cooked, add your cauliflower mixture to a food processor and blitz until smooth, then stir in your eggs, cheese and a pinch of pepper. If needed, add a little more Big Milk to loosen.
Step 5
  • Add this to a pan over a low heat. Drain the pasta (setting aside some pasta water for later), then toss your pasta and pancetta into the pan and stir until covered in cauli-cheese sauce.
Step 6
  • Pour your extra pasta water to loosen, stir it through, then serve and enjoy your high fibre, delicious Cauli-Cheese Carbonara!
