Vegetarian Curry

A tasteful vegetarian dish with Indian influences. Flat poppadoms are simply heated up in the microwave - they burn quickly so keep a watchful eye! If you want something extra to add to the curry add cooked beans or lentils in the pan.

Instructions

Step 1
  • Start by boiling the rice according to the instructions on the packet.
Step 2
  • Fry the onion, carrot, courgette and cauliflower in butter in a pan. Add curry and heat for another min.
Step 3
  • Pour on water and crushed tomatoes and cook for about 20 minutes. Add potatoes, garlic, ginger and yogurt and cook another 5 minutes.
Step 4
  • Top with chopped fresh coriander. Prepare poppadoms as directed on the package. Serve with rice and mango chutney.
