Courgette Soup with Cheese

A delicious courgette soup that can be chunky or blended smooth - depending on your preference.


Step 1
  • Cut the courgettes into slices and then into pieces. Peel and chop the onion.
Step 2
  • Fry the onion in butter in a pan. Add the courgettes, milk and stock.
Step 3
  • Let the soup boil for about 10 minutes. Flavour with chives, salt and pepper.
Step 4
  • Grate cheese. Whip the cream. Mix the cream and cheese. Stir the cream in the soup and serve.
