Baked Chocolate Cream with Orange Sauce

Fabulous chocolate cream baked in the oven and served with chocolate sauce and whipped cream, both flavoured with orange. This recipe was created by Klas Lindberg, Chef of the Year 2012.


Step 1
  • Boil the milk with the coffee beans. Leave to cool for 10 minutes.
Step 2
  • Chop the chocolate. Heat the sour cream in a saucepan and then add the chocolate and stir until it has melted.
Step 3
  • Add the milk and stir until smooth. Stir in the egg yolk and sugar mix with the warm cream.
Step 4
  • Heat the oven to 100 °.
Step 5
  • Divide the cream into 4 deep dishes and bake in the middle of the oven for about 35 minutes. Then let the cream cool in the refrigerator.
Step 6
  • Boil water, cocoa and sugar, stir in the liqueur and let it cool. Beat the cream lightly and mix with orange peel.
Step 7
  • Take out the chocolate cream 1 hour before serving. Spread over the sauce. Garnish with crushed or grated coffee beans.
