Instructions

  • Blend the pieces of steamed white asparagus with ¼ litre of vegetable broth for about 1 minute or until the mixture is even.
  • Melt butter at high heat in a heavy-bottomed saucepan. Make sure it does not begin to brown.
  • Add flour to the melted butter as you whisk. Now, add ½ litre of vegetable broth little by little as you continue whisking. Then add the asparagus purée.
  • Stir in the cream and bring it to a boil as you stir. Let it boil at low heat for approx. 5 minutes with the lid on.
  • Add salt and pepper and season the cream of asparagus soup to taste.

This soup should have a thick and creamy consistency. If you would like to thicken it, you can make more roux by combining flour with melted butter in a separate saucepan.
