Peppercorn Sauce

Peppercorn Sauce

Rich, sensual peppercorn sauce for dressing up meat dishes and chips for a delightful meal.


Step 1
  • Put onions and peppers in a warm, dry pan.
Step 2
  • Stir ingredients on a high heat for approximately ½ minute.
Step 3
  • Add cognac and let it evaporate whilst stirring. Add the beef stock and let it simmer.
Step 4
  • Add the crème fraîche and salt and let it cook with the other ingredients.
Step 5
  • Take the pan off the heat and stir the sauce. Cook the pepper sauce for approximately 1 minute and taste. Serve the pepper sauce with pink peppercorns.
