Instructions

Banana pancakes
  • Put eggs, half the oats, Skyr, banana, baking powder and salt in a blender.
  • Blend at the highest speed for approx. 1 minute or until the mixture is smooth. Put the batter in a bowl and fold in the rest of the oats.
  • Let a bit of the butter become golden in a pan (approx. 22 cm in diameter). Bake 3 small pancakes (approx. ½ dl batter per pancake) at medium heat for 2 minutes on each side or until golden.
  • Keep the pancakes warm under foil and repeat with the rest of the butter and batter.
Skyr cream
  • Mix Skyr, ⅔ of the berries and vanilla sugar in a bowl and mash it lightly with a fork.
  • Decorate the warm pancakes with Skyr cream, honey, and the last berries. Serve immediately.

The bananas add sweetness to the pancakes. Thus, you should use ripe bananas that are soft to the touch and have brown spots on the peel.
