Method

  • Preheat the oven to 180°C (with fan).
  • Finely chop 1 green jalapeño and cut the 100 grams cheddar cheese into small cubes.
  • In a large bowl, mix 175 grams flour, 2 tsp baking powder, salt, and your chopped jalapeño and cheese.
  • Blend 200 grams cottage cheese and 1 egg until smooth then add the 40 grams of melted the butter.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Lightly flour your work surface and transfer the dough to it. Gently flatten the dough and fold it over once. Shape it into a rectangle of about 3 cm thick.
  • Cut the dough into 6 scones and place on a baking tray lined with baking paper.
  • Whisk your other egg and brush the top of the scones. Bake for 18-20 minutes or until golden brown.
  • Let the scones cool slightly on the baking tray before serving.
