A comforting twist on a classic that we've made, tested, and can't stop coming back to. This pumpkin mac and cheese combines roasted pumpkin, tender chicken, and a velvety cheddar and cottage cheese sauce with a hint of smoked paprika and cayenne. Topped with a crispy panko crust and baked until golden and bubbling, it's a cozy high-protein dish that's just as good made ahead as it is fresh from the oven.

Method

  • Preheat the oven to 200°C (with fan).
  • Remove the seeds from the pumpkin and cut into large cubes. Spread on a baking tray lined with baking paper. Add 1 garlic clove and a few sprigs of fresh thyme.
  • Place 280g chicken breasts on the same tray. Drizzle everything with olive oil and season with salt and pepper.
  • Bake for 20 minutes. Remove the chicken and cut into bite-sized pieces. Return the pumpkin to the oven for a further 5-10 minutes until soft.
  • Meanwhile, cook 350g of pasta in salted water for 4-5 minutes, keeping it very al dente. Reserve 400 ml of the pasta cooking water before draining.
  • Add the roasted pumpkin, garlic, thyme leaves, ½ tsp smoked paprika, ¼ tsp ground cayenne pepper, 150g of cottage cheese, 100 g of the cheddar, and the 400ml pasta cooking water to a blender. Blend until smooth and season to taste.
  • Transfer the pasta and chicken to a large ovenproof dish. Pour over the pumpkin sauce and stir to combine.
  • Top with the remaining 50 grams cheddar cheese and the 20 grams panko breadcrumbs.
  • Bake for 15-20 minutes until golden and bubbling.
  • Leave to rest for 5-10 minutes before serving.

Stir gently when combining the pasta, chicken, and sauce. You want everything evenly coated without breaking up the chicken pieces. Make sure the sauce is well seasoned before pouring it over, as it's harder to adjust once everything is in the dish.

Cook the pasta for 4-5 minutes only, it should be very al dente before going into the dish. It will continue to absorb the sauce and cook through during the final bake, so pasta that's fully cooked at this stage will turn soft and mushy by the time it reaches the table.

Make sure to use the full amount of pasta cooking water; the starch it contains helps the sauce bind and cling to the pasta. Season well before combining, and don't skip the cayenne and smoked paprika, they add depth that stops the sauce from tasting flat.
