This cheesy root vegetable dish takes care of itself in the oven and is absolutely delicious with everyday meals!

Instructions

Step 1
  • Preheat the oven to 225 °. Peel and slice the sweet potatoes, parsnip and carrot.
Step 2
  • Shred the leek. Mix all vegetables, cheese and thyme together in an ovenproof dish.
Step 3
  • Mix the milk, cream, salt and pepper together and pour the mixture over the vegetables.
Step 4
  • Cook in the lower part of the oven for about 45 minutes.
